Ellen’s yummy, yummy vegan soup, as enjoyed at the Lakeview Women Artists in IL. event 12-1-2011

SWEET POTATO & CHICK PEA STEW  (serves 4)

2 Tbsp. canola oil
1 onion, chopped
2 cloves garlic, chopped
2 sweet potatoes, diced into 1-inch squares
2 tsp. cumin seed.
4 tomatoes roughly chopped
1 14 oz. can chick peas
2 tsp. honey
2 Tbsp. tomato paste
2 Tbsp. Dijon mustard
3 cups veggie stock
1 pound fresh spinach cut into ribbons
salt & pepper
 
Heat oil in a sauce pan. Add chopped onion and garlic and cook until softened.

Add sweet potatoes, cumin seeds, tomatoes, chick peas, honey, tomato past, mustard and hot veggie stock and cook until potatoes are tender.
